So yes, I am a vegan and decided to make the change from dairy-loving carnivore in January 2009. But I promise I’m not one of the scary vegans – I stay far away from PETA and instead try to focus on eating healthy foods (and hey, if it ends up being good for the animals and the environment, all the better!). I do not judge if you decide to eat meat, cheese, eggs and other animal products. What can I say, I drive a car with leather interior and buy the cute shoes and purses regardless of what they are made from. I guess this means I’m a “bad vegan” who just does the diet and not the true lifestyle. I can live with that!
People frequently ask me how I can possibly survive as a vegan. “What do you eat??? Only salads, right?? Aren’t you starving?? Don’t you miss cheese?!?!” The truth is it’s not that difficult, even for a lazy person like me who doesn’t usually have time to cook and thinks 30 minutes in the kitchen is 29 too many. It just takes a little preparation.
“Food for Thought” will share some of my culinary journeys as a vegan and demonstrate that making the switch isn’t as drastic as you may think.
